Zucchini in Black Butter Sauce
serves 4
Ingredients
- 12 small zucchini
- 3 T butter
- 1/4 C fresh sage, chopped
- 6 T parmesan cheese, grated
Instructions
- Cook the zucchini whole in boiling, salted water until tender but not mushy. Drain, trim the ends, then slice.
- Heat the butter in a small saucepan with the sage until the butter is dark brown.
- Sprinkle the cheese over the zucchini, season to taste.
- Plate, dress with the butter, and serve.
